Anyone can make a grilled cheese sandwich. We all probably learned how to make the same sandwich when we were kids. Take two pieces of white bread, put lots of butter on the bread, tear the wrapper off of a cheese single slice (what was that cheese made of ?), melt some butter in a frying pan and grill the sandwich. We all probably had tomato soup as a companion to our sandwich. Most of us have grown up and, hopefully, so have our palettes.

This recipe is a grown up version of the classic grilled cheese. First off, we use a whole grain bread or a sourdough instead of a doughy white bread. Second, we don't use any oddly colored single sliced wrapped cheese product. There are five, count 'em five, different cheeses in this sandwich and none of them are a strange orange color. Third, we are going to add avocado to our adult sandwich.

We are going to use avocado slices for our recipe and add the creamy rich taste and texture of our five different cheeses. 6 tablespoons of butter, softened and divided 3 tablespoons mayo 3 tablespoons shredded Parmesan cheese 1/8 teaspoon onion powder 8 slices of sourdough bread 4 ounces Brie cheese, rind removed and sliced 2 medium ripe avocados, peeled and sliced 1/2 cup shredded white cheddar cheese 1/2 cup shredded Monterey Jack cheese 1/2 cup shredded Gyuere cheeseInstructions
Set you electric griddle to medium low, about 275 degrees. Butter one side of each piece of bread, using 3 tablespoons of the butter. Grill for 2-3 minutes or until the bread is lightly toasted and turning brown. Remove from the griddle and set aside. In a bowl combine all of the remaining ingredients except for the avocados and the Brie cheese. Assemble the sandwiches. With the toasted side up on 4 of the slices of bread, add the sliced brie and sliced avocados. Sprinkle each piece with the cheese mixture. Top the 4 bread pieces with the remaining 4 bread pieces, toasted side facing the cheese mixture. Butter both sides of the sandwich and toast on the electric griddle for 5-6 minutes for each side. The cheese should be melting and the bread should be nicely browned.
